V African Peanut Stew with Onion Rice

                                Prep time: 40 minutes      Serves: 4

Ingredients:
Smooth Organic Peanut Butter
1 head of Any Type of Cabbage or Tough Cooking Greens (the more the better)
1 Garlic
2 Onions
2 Cups Brown Rice
Turmeric Power
Cayenne Pepper
Sea Salt
1 Tbsp Honey

Please note: Traditionally you use collard greens or tough cabbage greens in this recipe, I usually use cauliflower leaves, celery leaves, Brussel sprout leaves and any excess green leaves on my other food, that I don't want to just throw away.

Good for bulking up because it's a high protein dish

Peanut Stew

  1. Wash and prepare your greens by soaking and rinsing them in warm water.
  2. Chop your garlic, 1/2 onion and greens.
  3. Heat a stewing pan, with 2 tbsps of coconut oil on high heat.
  4. Keep stirring until all leaves are softened and wilted.
  5. Add a very light sprinkling of turmeric, cayenne powder and sea salt and turn down to medium heat.
  6. Mix 5 tbsps of smooth peanut butter in 1 cup of water until dissolved.
  7. Add this to your cabbage and add 1 tbsp of honey. Simmer with lid for 15 minutes. 
  8. Start cooking your rice.
  9. Once 15 minutes have passed your stew should be thickened and creamy. If not had more peanut butter and water.
  10. Once your peanut stew is cooked the greens will be soft and wilted. Add salt as desired.

Onion Rice
  1. Heat a pan on high heat with 2 tbsps of coconut oil and chop 1 1/2 onions to fry until soften in the pan.
  2. Add 2 cups of brown rice plus sea salt as desired and stir until rice is shiny.(Keep stirring otherwise it will burn)
  3. Add 5 cups of water and cook on high heat for 8 minutes with a lid.
  4. When 8 minutes have passed turn it down to low to medium heat and check every 15 minutes until all the water has dissolved and the rice grains are cooked.
  5. If the rice is not cooked add more water.
