Ingredients:
260g Organic dates
275g Organic cashews
Optional: Add additional nuts for topping, handful of crushed pistachio's,
1 tbsp Honey or 1 tsp maple syrup
You can also make ice cream with this recipe!

These bars are best eaten cool, as the warmer they get, the more sticky they are.
Snack Bars
- Wash and soak the cashews and dates. Remember to de-seed the dates!
- Soak in water for 10 minutes
- Pull the dates in half, so that they are in slices
- Using a food processor blend the dates and cashews, together.
- In 5 minute intervals scrape the sides of the food processor using a spatula. To encourage the coarse areas to blend until smooth.
- Blend until completely smooth.
- Put baking paper, into the bottom of a tray or rectangular glass container. (preferably seal-able)
- Spread the mixture evenly on the top of the baking paper, making sure it is flat.
- Optional: Put baking paper over the top and use your hands to apply pressure to flatten.
- Using a spatula smooth over the top evenly.
- Cover with cling film and place in the freezer for a minimum of 30 minutes maximum 1 hour.
- Slice the frozen mixture into snack bars and wrap in baking paper to eat.
- I used crumbled pistachio's for my topping, but it's optional.
