Prep time: 30 minutes      Serves: 3

Ingredients:
Pancakes
1 Ripe Plantain
1 and 1/4 Cups Buckwheat or Coconut Flour
1 Tbsp Baking Soda
1 tsp flaxmeal or Chia Seed
1 Cup Non-Dairy Milk
2 tbsp Barley Malt Powder
3 tbsp cane sugar Or Raw Honey
(Optional: Vanilla Extract, Maple Syrup, lemon juice)

Please note: You can use raw honey, agave or maple syrup instead of cane sugar. As it's generally healthier to avoid any sugar.
Plantain taste great in pancakes, it also has more nutritional value then banana

  1. Blend all the ingredients together, using a food processor.
  2. Put coconut oil in a pan and fry the pancakes on low heat, Wait for holes to appear on the top before flipping.
  3. Flip very slowly to maintain the pancakes shape, cook until both sides are golden brown.
  4. For optional toppings you can sprinkle barley malt, maple syrup and lemon juice over some thin plantain slices and the pancakes as seen in picture. I made coconut whipped cream with mine in the picture.
