Ingredients:
200g dates
120g cashews
1 tbsp maple syrup
Optional: 1/4 cup non-diary milk

Ice Cream
- Wash and soak the cashews and dates. Remember to de-seed the dates!
- Soak in water for 10 minutes
- Pull the dates in half, so that they are in slices
- Using a food processor blend the dates and cashews, together.
- In 5 minute intervals scrape the sides of the food processor using a spatula. To encourage the course areas to blend more.
- Blend until completely smooth.
- Optional: Add your maple syrup and non-diary milk.
- Get a rectangular resealable container.
- Spread the mixture evenly inside your dish, making sure it is flat.
- Using a spatula smooth over the top evenly.
- Place in the freezer for a minimum of 30 minutes.
- Once frozen, leave for 5 minutes to defrost before using an ice cream scoop to serve
- I used crumbled pistacho's for my topping, but it's optional.
